Instructions
1️⃣ Cook the Pasta
- Bring a large pot of salted water to a boil. Add linguine and cook according to package instructions until al dente.
- Reserve ½ cup of pasta water, then drain and set aside.
2️⃣ Sear the Steak
- Pat the steak dry and season both sides with salt and pepper.
- Heat a large skillet over medium-high heat. Add 1 tablespoon butter and let it melt until sizzling.
- Add the steak and sear for 3–4 minutes per side, or until cooked to your preferred doneness.
- Remove the steak from the pan and let it rest for 5 minutes before slicing thinly against the grain.
3️⃣ Make the Garlic Butter Sauce
- In the same skillet, reduce heat to medium and add the remaining tablespoon of butter.
- Add the minced garlic and sauté for 30 seconds, just until fragrant (do not brown).
- Pour in the heavy cream and bring to a gentle simmer, stirring constantly.
- Add the grated Parmesan and whisk until melted into a creamy sauce.
- Season with black pepper and a pinch of salt. Add a splash of reserved pasta water if the sauce is too thick.
