Instructions
- Prepare the Vegetables: Start by trimming the tough ends of the asparagus and cutting it into 2-inch pieces. Slice the mushrooms and set them aside with the asparagus. This will ensure everything is ready to go when it’s time to stir-fry.
- Cook the Shrimp: Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the shrimp to the pan, seasoning them with salt and black pepper. Stir-fry the shrimp for 2-3 minutes per side, or until they turn pink and opaque. Once cooked, remove the shrimp from the pan and set aside.
- Stir-Fry the Vegetables: In the same skillet, add the remaining 1 tablespoon of olive oil. Add the garlic, asparagus, and mushrooms to the pan. Stir-fry for 4-5 minutes, or until the asparagus is tender-crisp and the mushrooms release their juices and start to brown. Add a pinch of salt and black pepper to season the vegetables as they cook.
- Combine the Shrimp and Sauce: Once the vegetables are cooked, return the shrimp to the pan. In a small bowl, mix the soy sauce, honey (if using), and red pepper flakes (if using) to create a quick sauce. Pour the sauce over the shrimp and vegetables, tossing everything together to coat evenly. Stir-fry for another 2-3 minutes, allowing the sauce to slightly thicken and coat the shrimp and vegetables.
- Serve: Transfer the garlic shrimp stir-fry to a serving platter or individual bowls. Garnish with freshly chopped cilantro or parsley and a sprinkle of sesame seeds for a bit of crunch and color. Serve immediately and enjoy this healthy, flavorful meal!
