Ginger Scallion Lobster with Aromatic Sauce ๐Ÿฆž๐Ÿง„๐ŸŒถ๏ธ

๐Ÿ›’ Ingredients (Serves 2โ€“3)

For the Lobster:

  • 2 live lobsters (about 1ยฝ lbs / 680 g each)
  • ยฝ cup cornstarch (for coating)
  • 1 tsp salt (for seasoning)
  • Neutral oil (peanut, canola, or vegetable oil โ€“ enough for shallow frying)

For Aromatics & Sauce:

  • 3 tbsp ginger, finely julienned
  • 4โ€“5 scallions, cut into 2-inch pieces (white and green parts separated)
  • 3 cloves garlic, minced
  • 1 small red chili, thinly sliced (optional)
  • 2 tbsp Shaoxing wine (or dry sherry)
  • ยฝ cup chicken stock (or water + pinch of chicken bouillon)
  • 1 tbsp oyster sauce
  • 1 tbsp soy sauce
  • ยฝ tsp sugar
  • 1 tsp sesame oil
