๐ Ingredients (Serves 2โ3)
For the Lobster:
- 2 live lobsters (about 1ยฝ lbs / 680 g each)
- ยฝ cup cornstarch (for coating)
- 1 tsp salt (for seasoning)
- Neutral oil (peanut, canola, or vegetable oil โ enough for shallow frying)
For Aromatics & Sauce:
- 3 tbsp ginger, finely julienned
- 4โ5 scallions, cut into 2-inch pieces (white and green parts separated)
- 3 cloves garlic, minced
- 1 small red chili, thinly sliced (optional)
- 2 tbsp Shaoxing wine (or dry sherry)
- ยฝ cup chicken stock (or water + pinch of chicken bouillon)
- 1 tbsp oyster sauce
- 1 tbsp soy sauce
- ยฝ tsp sugar
- 1 tsp sesame oil
