1️⃣ Prep the Lobster
- To humanely dispatch lobsters, freeze them for 20–30 minutes before quickly cutting between the eyes with a sharp knife.
- Separate claws, tail, and body. Cut body into halves or thirds. Lightly crack claws with the back of a knife.
- Pat lobster pieces dry with paper towels, season with salt, and coat evenly in cornstarch.
2️⃣ Fry the Lobster
- Heat oil in a wok or deep skillet to 350°F (175°C).
- Fry lobster pieces in batches for 1–2 minutes until the shells turn red and meat is about 80% cooked.
- Transfer to paper towels to drain excess oil.
