Ginger Scallion Lobster with Aromatic Sauce 🦞🧄🌶️

👨‍🍳 Preparation

1️⃣ Prep the Lobster

  1. To humanely dispatch lobsters, freeze them for 20–30 minutes before quickly cutting between the eyes with a sharp knife.
  2. Separate claws, tail, and body. Cut body into halves or thirds. Lightly crack claws with the back of a knife.
  3. Pat lobster pieces dry with paper towels, season with salt, and coat evenly in cornstarch.

2️⃣ Fry the Lobster

  1. Heat oil in a wok or deep skillet to 350°F (175°C).
  2. Fry lobster pieces in batches for 1–2 minutes until the shells turn red and meat is about 80% cooked.
  3. Transfer to paper towels to drain excess oil.
