Ginger Scallion Lobster with Aromatic Sauce 🦞🧄🌶️

3️⃣ Make the Ginger Scallion Sauce

  1. Remove most of the frying oil from the wok, leaving about 2 tablespoons.
  2. Add julienned ginger and stir-fry over medium-high heat for 30 seconds until fragrant.
  3. Stir in minced garlic and the white parts of the scallions. Cook for another 30 seconds.
  4. Deglaze with Shaoxing wine, letting it sizzle for a few seconds.
  5. Add chicken stock, oyster sauce, soy sauce, and sugar. Stir to combine.
  6. Return the lobster to the wok. Toss well to coat with sauce and continue cooking for about 1 minute.

4️⃣ Finish & Serve

  1. Add scallion greens, red chili slices, and sesame oil. Stir briefly just to combine and preserve the freshness of the greens.
  2. Serve immediately on a large platter, spooning the remaining sauce over the lobster.
