3️⃣ Make the Ginger Scallion Sauce
- Remove most of the frying oil from the wok, leaving about 2 tablespoons.
- Add julienned ginger and stir-fry over medium-high heat for 30 seconds until fragrant.
- Stir in minced garlic and the white parts of the scallions. Cook for another 30 seconds.
- Deglaze with Shaoxing wine, letting it sizzle for a few seconds.
- Add chicken stock, oyster sauce, soy sauce, and sugar. Stir to combine.
- Return the lobster to the wok. Toss well to coat with sauce and continue cooking for about 1 minute.
4️⃣ Finish & Serve
- Add scallion greens, red chili slices, and sesame oil. Stir briefly just to combine and preserve the freshness of the greens.
- Serve immediately on a large platter, spooning the remaining sauce over the lobster.
