Gooey Mississippi Mud Chocolate Cake

Preparation

1️⃣ Prepare the Chocolate Cake

  1. Preheat the oven to 350°F (175°C). Grease a 23×33 cm rectangular baking pan, ensuring the corners are coated so the cake releases cleanly after baking.
  2. In a large bowl, mix the flour, sugar, cocoa, baking powder, baking soda, and salt. Break up any lumps in the cocoa and sugar so the dry mixture is smooth and evenly colored.
  3. Add the eggs, milk, vegetable oil, and vanilla. Mix until the batter becomes thick, dark, and uniform. Avoid overmixing—just combine until no dry pockets remain.
  4. Pour in the hot water or coffee. The batter will immediately loosen and become runny, which is exactly what creates this cake’s moist, tender crumb.
  5. Pour the batter into the prepared pan and spread it evenly.
  6. Bake for 30–35 minutes. The top should spring back lightly when touched, and a toothpick should come out with moist crumbs but not wet batter.
