Greek-Style Chicken Plate with Lemon Garlic Marinade

👩‍🍳 Instructions

1️⃣ Marinate the Chicken

  • In a large bowl or zip-top bag, combine olive oil, lemon juice, zest, garlic, oregano, salt, and pepper.
  • Add the chicken legs and turn to coat thoroughly. Cover and marinate in the refrigerator for at least 1 hour or up to 24 hours for maximum flavor.

2️⃣ Cook the Chicken

  • Oven method: Preheat oven to 400°F (200°C). Place marinated chicken on a baking sheet or dish and roast for 35–45 minutes, or until the skin is golden and internal temp reaches 165°F (74°C).
  • Grill method: Preheat grill to medium heat. Grill chicken skin-side down for 5–6 minutes per side, then move to indirect heat and cook for another 20–25 minutes until done.

3️⃣ Rest and Serve

  • Let the chicken rest for 5–10 minutes before serving to lock in juices.
  • Serve hot with your choice of Greek-inspired sides and a wedge of lemon for extra brightness.
