Grilled Cajun Butter Lobster Tails

    1. Prepare the Lobster Tails: Preheat your grill to medium-high heat so it is hot enough to create light charring while keeping the lobster meat tender. Brush each split lobster tail with olive oil, coating both the shell and exposed flesh lightly. Season the flesh with salt and black pepper to enhance the natural sweetness of the lobster without overpowering it. Allow the seasoned tails to rest briefly while you prepare the butter.
    2. Prepare the Cajun Butter: In a small bowl, combine the melted butter with the minced garlic, Cajun seasoning, fresh parsley, lemon juice, and smoked paprika if using. Stir until everything is evenly incorporated and the garlic and herbs are suspended in the butter. The lemon juice brightens the richness, while the Cajun seasoning adds warmth and spice. Keep this mixture close by for frequent basting on the grill.
    3. Grill the Lobster Tails: Place the lobster tails shell-side down directly on the grill grates. This positioning protects the delicate meat from direct heat while allowing the shells to act as a natural barrier. Immediately baste the exposed flesh generously with the Cajun butter mixture. Grill for 5–7 minutes, or until the meat becomes opaque and firm to the touch. During the final minute of cooking, you may flip the tails flesh-side down to achieve a slight char—this step is optional but adds deeper grilled flavor. Continue basting as they cook to maximize flavor and moisture.
