Prepare the Lobster Tails:

  1. Preheat your grill to medium-high heat, around 400–425°F (200–220°C). Clean the grates and lightly oil them to prevent sticking.
  2. Using kitchen shears, carefully cut through the top shell of each lobster tail lengthwise. Split the tails in half to expose the meat, keeping it attached to the shell. Rinse and pat dry.
  3. Brush the exposed meat generously with olive oil and season lightly with salt and freshly cracked black pepper. This helps prevent the lobster from drying out and enhances its natural sweetness.

Prepare the Cajun Butter:

  1. In a small bowl, combine the melted butter, minced garlic, Cajun seasoning, fresh parsley, lemon juice, and smoked paprika if using. Whisk until fully blended.
  2. Taste the butter mixture and adjust seasoning based on your spice preference — more Cajun for extra heat or lemon for brightness.
