Grilled Cheese Sloppy Joes on Texas Toast

Instructions

  1. Cook the beef and onion:
    In a large skillet over medium-high heat, add the ground beef and diced onion. Cook, breaking the meat into crumbles as it browns. Stir occasionally to ensure even cooking and prevent sticking. Cook for about 7–9 minutes, or until the beef is fully browned and the onions are softened and translucent. Drain excess grease if needed.
  2. Season the mixture:
    Season the beef and onion mixture with salt and pepper to taste. If desired, stir in a splash of ketchup or Worcestershire sauce for extra tang and depth. Simmer over low heat for another 2–3 minutes to meld the flavors, then remove from heat. The final mixture should be moist but not overly runny, with a balanced, savory flavor that pairs well with cheese and bread.
  3. Prep the bread:
    Lay out the Texas Toast slices on a clean surface. Spread a thin, even layer of softened butter on one side of each slice—this will be the outside of the sandwich to help it grill up golden and crispy. Flip the slices so the unbuttered sides face up for assembling.
  4. Assemble the sandwiches:
    On the unbuttered side of half the slices, add a layer of shredded or sliced cheese, then spoon a generous portion of the sloppy joe mixture over the cheese. Top with another layer of cheese (for extra melt!) and place another slice of Texas Toast on top, buttered side facing out. Press down gently to compact the sandwich slightly without squeezing the filling out.
