Instructions
- Prepare the Marinade: In a bowl, combine the coconut oil (or olive oil), lime zest and juice, minced garlic, honey (if using), shredded coconut (if using), and a pinch of salt and pepper. Stir to mix well, creating a fragrant marinade that will infuse the shrimp with all those tropical flavors.
- Marinate the Shrimp: Add the shrimp to the bowl with the marinade, tossing to coat evenly. Let the shrimp marinate for 15-20 minutes in the refrigerator. If you marinate them for too long, the lime juice may begin to « cook » the shrimp, so it’s best to keep it under 30 minutes.
- Prepare the Grill or Grill Pan: Preheat your grill or grill pan to medium-high heat. If you’re using wooden skewers, soak them in water for 10-15 minutes to prevent them from burning on the grill. Thread the marinated shrimp onto the skewers, making sure they’re evenly spaced.
- Grill the Shrimp: Place the shrimp skewers on the grill and cook for 2-3 minutes per side, or until the shrimp turn pink and opaque. Be careful not to overcook them, as shrimp cook quickly and can become rubbery if left on the grill too long.
- Serve: Once the shrimp are cooked, remove them from the skewers and transfer them to a serving platter. Garnish with freshly chopped cilantro and serve with lime wedges on the side for an extra burst of citrusy freshness. Serve immediately with your favorite side dishes, such as rice, quinoa, or a fresh salad.
