Hearty Taco Soup Recipe (Momma’s Recipe!)

Directions

  1. Brown the Meat
    1. In a large pot, brown the 2 lbs of ground hamburger meat over medium heat, breaking it up as it cooks. Once browned, drain the fat if desired (though you don’t have to if you want extra richness).
  2. Add the Seasonings and Canned Ingredients
    1. Open all the cans (corn, black beans, ranch style beans, Rotel, and stewed tomatoes) and pour them into the pot with the browned meat. Do not drain any of the cans.
    2. Add both the dry ranch seasoning packet and the taco seasoning packet to the mixture and stir to combine everything evenly.
  3. Heat the Soup
    1. Place a lid on the pot and let the soup heat up over medium-low heat. Stir occasionally to ensure everything is combined well.
    2. Heat until the soup is hot throughout, typically around 10-15 minutes. You can bring it to a light boil if desired, but it’s not necessary—just make sure everything is hot!
  4. Serve and Enjoy!
    1. Once heated, ladle the soup into bowls and top with shredded cheese and sour cream, if desired. Enjoy with a side of tortilla chips for extra crunch, or serve it on its own for a heartier meal.
