1️⃣ Activate the Yeast:
- In a small bowl, mix the warm water, sugar, and active dry yeast. Let the mixture sit for 5–10 minutes until it becomes foamy. This step ensures the yeast is active and ready to leaven the dough.
2️⃣ Make the Dough:
- In a large mixing bowl, combine the all-purpose flour and salt. Pour in the foamy yeast mixture and olive oil.
- Stir until a sticky dough begins to form, then turn it out onto a floured surface.
- Knead for 8–10 minutes until the dough is smooth and elastic. Add a bit more flour if the dough is too sticky, but avoid over-flouring.
3️⃣ First Rise:
- Place the dough in a lightly oiled bowl, cover it with a clean kitchen towel, and let it rise in a warm, draft-free place for 1 to 1.5 hours, or until doubled in size.
4️⃣ Shape & Prepare for Baking:
- Preheat your oven to 375°F (190°C).
- Punch down the risen dough to release air bubbles. Divide it into two equal portions and shape each into a loaf or oval shape.
- Place the loaves on a greased baking sheet or a parchment-lined tray.
- Whisk the egg in a small bowl and brush it over the tops of both loaves. This egg wash helps create a glossy, golden finish.
- Sprinkle each loaf with grated Parmesan cheese and the dried herb blend.
