Step 1: Prepare the Cream Cheese
In a large mixing bowl, beat together the softened cream cheese and confectioners’ sugar. Use an electric mixer on medium speed until the cream cheese is smooth and creamy. Step 2: Add the Pineapple
Drain the can of crushed pineapple, but be sure to reserve a little of the pineapple juice. Add the pineapple into the cream cheese mixture, and beat until well combined. If the mixture is too thick, you can add a small amount of the reserved pineapple juice to achieve a smooth, spreading consistency. Add the juice little by little until the spread reaches the desired texture.
Step 3: Mix in the Pecans
Once the cream cheese and pineapple are well combined, gently mix in the chopped pecans by hand. The pecans will give the spread a delightful crunch and a slightly nutty flavor that complements the sweetness of the pineapple. Stir until the nuts are evenly distributed throughout the spread.
