- Prepare the shrimp patty mixture: Start by finely chopping the shrimp into small pieces or pulse them in a food processor for a few seconds until they form a chunky paste. Be careful not to over-process the shrimp—texture is key! Transfer the chopped shrimp into a large mixing bowl.
- Season the shrimp: Add the olive oil, smoked paprika, garlic powder, and a pinch of salt and black pepper to the shrimp mixture. Use a spoon or your hands to mix everything together until well combined. This seasoning blend adds smokiness and a little heat to the shrimp, making the patty flavor-packed and delicious.
- Form the shrimp patties: Divide the shrimp mixture into 4 equal portions. With wet hands (to prevent sticking), shape each portion into a patty about ¾-inch thick. Press lightly to form even patties that will cook evenly.
- Cook the shrimp patties: Heat a non-stick skillet or grill pan over medium heat and add a little olive oil. Once the oil is hot, carefully add the shrimp patties to the pan. Cook for 2-3 minutes on each side, or until the patties are golden brown and cooked through. The shrimp will turn opaque when fully cooked. Be sure not to overcook them to keep the patties juicy and tender.
- Prepare the guacamole: While the shrimp patties are cooking, prepare the guacamole. In a small bowl, mash the ripe avocados with a fork until smooth, leaving a few chunks for texture. Add the diced tomato, chopped red onion, cilantro, and lime juice. Stir everything together until well combined, and season with salt and pepper to taste. The guacamole adds a creamy, fresh contrast to the savory shrimp patties.
