- Prepare the Shrimp Patty:
Roughly chop the shrimp into small pieces so they retain some texture when formed into patties. Place the chopped shrimp in a bowl and add the breadcrumbs, parsley, green onions, minced garlic, lemon zest, paprika, cayenne pepper if using, and a generous pinch of salt and pepper. Mix until the ingredients are evenly dispersed. Beat the egg separately, then pour it into the shrimp mixture and stir to bind the ingredients together. Form the mixture into 4 equal patties, pressing them just firmly enough so they hold their shape without becoming overly dense. - Cook the Shrimp Patty:
Heat the olive oil in a large skillet over medium-high heat. When the oil is hot and shimmering, add the shrimp patties in a single layer. Cook for 3–4 minutes per side, allowing them to become golden brown with lightly crisped edges. The patties are done when the shrimp turns opaque and the center feels firm but still moist. Transfer the cooked patties to a plate and set them aside while preparing the remaining components. - Make the Sauce:
In a small bowl, combine the mayonnaise, Dijon mustard, and lemon juice. Stir until smooth and creamy. The sauce should have a bright, tangy flavour that complements the richness of the shrimp and balances the guacamole. - Prepare the Guacamole:
In another bowl, mash the ripe avocado until mostly smooth, leaving a few small chunks if preferred. Add the lime juice, chopped cilantro, and a pinch of salt. Mix gently so the flavours blend while the avocado maintains a creamy texture. - Assemble the Burger:
