1️⃣ Glaze the Salmon
- Season the salmon fillet with salt, black pepper, and chili flakes.
- Heat olive oil in a nonstick or cast-iron skillet over medium heat.
- Place the salmon skin-side down and sear for 4–5 minutes until the skin is crisp.
- Flip the fillet, reduce heat slightly, and brush the top with honey or maple syrup.
- Continue cooking for another 3–4 minutes, spooning the glaze over the fish until caramelized and cooked through.
2️⃣ Fry the Plantains
- In a separate pan, heat a small amount of oil over medium heat.
- Add plantain slices in a single layer and fry for 2–3 minutes per side until golden brown.
- Remove and drain on a paper towel. Sprinkle with a pinch of sea salt while hot.
3️⃣ Sauté the Spinach
- In the same skillet used for the plantains, add a dash of oil if needed.
- Sauté fresh spinach with a pinch of salt and optional garlic until wilted and vibrant green (1–2 minutes).
4️⃣ Assemble the Plate
- Arrange the salmon fillet, plantains, sautéed spinach, and avocado slices on a serving plate.
- Sprinkle chili flakes and sea salt over the avocado for added flavor.
- Optional: drizzle lime juice over the entire plate for a zesty finish.
