1️⃣ Make the Brownie Base
- Preheat oven to 350°F (175°C). Line the bottom of a 9-inch springform pan with parchment and lightly grease the sides.
- In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
- In a separate bowl, whisk melted butter and sugar until combined. Add eggs and vanilla and mix until smooth.
- Stir in dry ingredients just until combined. Pour into prepared pan and smooth the top.
- Bake for 18–20 minutes, until set but not overbaked. Let cool while you prepare the cheesecake layer.
2️⃣ Prepare the Cheesecake Filling
- Reduce oven to 325°F (160°C).
- In a large bowl, beat cream cheese until very smooth (2–3 minutes).
- Add sugar and continue beating until creamy. Mix in eggs one at a time, scraping sides as needed.
- Add sour cream and vanilla, and beat just until combined — avoid overmixing.
- Pour cheesecake filling over cooled brownie base. Smooth the top.
- Bake for 50–60 minutes, or until center is slightly jiggly and edges are set.
- Turn off oven, crack the door open, and let cheesecake cool inside for 1 hour. Then refrigerate for at least 4 hours or overnight.
