Hot Fudge Sundae Brownie Cheesecake 🍫🍒

👩‍🍳 Instructions

1️⃣ Make the Brownie Base

  1. Preheat oven to 350°F (175°C). Line the bottom of a 9-inch springform pan with parchment and lightly grease the sides.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
  3. In a separate bowl, whisk melted butter and sugar until combined. Add eggs and vanilla and mix until smooth.
  4. Stir in dry ingredients just until combined. Pour into prepared pan and smooth the top.
  5. Bake for 18–20 minutes, until set but not overbaked. Let cool while you prepare the cheesecake layer.

2️⃣ Prepare the Cheesecake Filling

  1. Reduce oven to 325°F (160°C).
  2. In a large bowl, beat cream cheese until very smooth (2–3 minutes).
  3. Add sugar and continue beating until creamy. Mix in eggs one at a time, scraping sides as needed.
  4. Add sour cream and vanilla, and beat just until combined — avoid overmixing.
  5. Pour cheesecake filling over cooled brownie base. Smooth the top.
  6. Bake for 50–60 minutes, or until center is slightly jiggly and edges are set.
  7. Turn off oven, crack the door open, and let cheesecake cool inside for 1 hour. Then refrigerate for at least 4 hours or overnight.
