Ingredients
- 500 g (1.1 lbs) ground beef (80/20 for juiciness and flavor)
- 1 small onion, finely diced (for savory depth)

- 4 large flour tortillas (for wrapping the filling)

Instructions
- Cook the beef: In a large skillet, heat a little oil over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned and fully cooked, about 7-8 minutes. Add the diced onion and cook for another 2-3 minutes, or until the onion is softened. Season with salt and black pepper to taste. Once cooked, remove from heat and set aside.
- Prepare the bacon: While the beef is cooking, crisp up the bacon in a separate skillet over medium heat. Once the bacon is crispy, remove it from the pan and set it aside on a paper towel-lined plate to drain. Chop the bacon into small pieces.
- Make the creamy cheese sauce: In the same skillet used for the bacon, melt 2 tablespoons of butter over medium heat. Add 1 tablespoon of flour to the melted butter and whisk constantly to form a roux. Cook for about 1 minute to eliminate the raw flour taste. Gradually pour in the heavy cream, whisking constantly until the sauce begins to thicken, about 3-4 minutes. Once thickened, stir in the shredded cheddar cheese, garlic powder, and Dijon mustard (if using). Continue stirring until the cheese is fully melted and the sauce is smooth and creamy.
- Assemble the burritos: Warm the flour tortillas in a skillet or microwave for a few seconds to make them pliable. Place a generous amount of the cooked beef mixture in the center of each tortilla, followed by a few pieces of crispy bacon and a drizzle of the creamy cheese sauce. Sprinkle a little extra shredded cheddar cheese on top of the filling for added cheesiness.
- Wrap the burritos: Fold the sides of the tortilla inwards and roll it up tightly, ensuring the filling is completely enclosed in the tortilla. Repeat the process with the remaining tortillas and filling.
