Huge Bacon Cheeseburger Burrito with Creamy Cheese Sauce Recipe

Ingredients

  • 500 g (1.1 lbs) ground beef (80/20 for juiciness and flavor)
  • 1 small onion, finely diced (for savory depth)
  • Salt and black pepper to taste (for seasoning)
  • 8 slices crispy cooked bacon, chopped (for crunch and flavor)
  • 4 large flour tortillas (for wrapping the filling)
  • 1 ½ cups shredded cheddar cheese (for melting into the filling)
  • 1 cup heavy cream (for the creamy cheese sauce)
  • 2 tablespoons butter (for the sauce base)
  • 1 tablespoon all-purpose flour (for thickening the sauce)
  • 1 teaspoon garlic powder (for flavoring the cheese sauce)
  • 1 teaspoon Dijon mustard (optional, for extra tang in the sauce)

Instructions

  1. Cook the beef: In a large skillet, heat a little oil over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned and fully cooked, about 7-8 minutes. Add the diced onion and cook for another 2-3 minutes, or until the onion is softened. Season with salt and black pepper to taste. Once cooked, remove from heat and set aside.
  2. Prepare the bacon: While the beef is cooking, crisp up the bacon in a separate skillet over medium heat. Once the bacon is crispy, remove it from the pan and set it aside on a paper towel-lined plate to drain. Chop the bacon into small pieces.
  3. Make the creamy cheese sauce: In the same skillet used for the bacon, melt 2 tablespoons of butter over medium heat. Add 1 tablespoon of flour to the melted butter and whisk constantly to form a roux. Cook for about 1 minute to eliminate the raw flour taste. Gradually pour in the heavy cream, whisking constantly until the sauce begins to thicken, about 3-4 minutes. Once thickened, stir in the shredded cheddar cheese, garlic powder, and Dijon mustard (if using). Continue stirring until the cheese is fully melted and the sauce is smooth and creamy.
  4. Assemble the burritos: Warm the flour tortillas in a skillet or microwave for a few seconds to make them pliable. Place a generous amount of the cooked beef mixture in the center of each tortilla, followed by a few pieces of crispy bacon and a drizzle of the creamy cheese sauce. Sprinkle a little extra shredded cheddar cheese on top of the filling for added cheesiness.
  5. Wrap the burritos: Fold the sides of the tortilla inwards and roll it up tightly, ensuring the filling is completely enclosed in the tortilla. Repeat the process with the remaining tortillas and filling.
