Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat for easy removal and cleanup.
- Mix the dough: In a large bowl, combine the cake mix, peanut butter, oil, and eggs. Stir until a thick, sticky dough forms. The mixture will be dense — use a sturdy spatula or hand mixer if needed.
- Scoop and shape: Roll the dough into balls, about 1 to 1½ tablespoons each. Place them 2 inches apart on the prepared baking sheet.
- Optional criss-cross: For a classic peanut butter cookie look, use a fork to gently press a criss-cross pattern on the tops of the dough balls.
- Bake: Bake for 10–12 minutes or until the edges are set and lightly golden. The centers may appear slightly soft — they will firm up as they cool.
- Cool: Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
