- Prepare the Oven and Pans
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans, or line them with parchment paper for easy removal later.
- Mix the Dry Ingredients
- In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt. This ensures the dry ingredients are evenly distributed and helps prevent clumps in the batter.
- Combine the Wet Ingredients
- In another bowl, whisk the eggs, milk, vegetable oil, and vanilla extract together until smooth. The oil adds moisture to the cake, and the vanilla enhances the flavor.
- Make the Cake Batter
- Gradually add the wet ingredients to the dry ingredients, mixing gently with a spatula or electric mixer on low speed. Once combined, beat on medium speed for 2 minutes to help the batter become smooth and slightly aerated.
- Finally, add the boiling water to the batter. The batter will be quite thin, but this is what helps create the cake’s incredibly soft texture. Stir until fully combined.
- Bake the Cake
- Pour the batter evenly into the prepared cake pans. Tap the pans gently on the counter to remove any air bubbles.
- Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. Be sure not to overbake, as this can make the cake dry.
- Cool the Cake
- Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely. This step helps prevent the cakes from breaking apart when removed from the pans.
- Serve
- Once the cakes are completely cool, frost with your favorite chocolate frosting or enjoy them plain for a simpler treat. If desired, garnish with chocolate shavings, berries, or a dusting of powdered sugar.
