1. Mango Pudding
Ingredients
- 1½ cups mango purée
- ¼ cup sugar
- ½ cup milk
- ½ cup heavy cream
- 2½ tsp gelatin powder
- ¼ cup warm water
Instructions
- In a small bowl, combine gelatin powder with warm water and let bloom for 5 minutes. The mixture will thicken as it sets.
- In a saucepan, gently heat the milk, cream, and sugar over medium-low heat just until the sugar dissolves. Do not boil.
- Add the bloomed gelatin to the warm milk mixture and stir continuously until fully dissolved and smooth.
- Remove from heat and mix in the mango purée until the color and texture are consistent.
