Italian Meatball Lasagna Roll-Ups 🇮🇹

Instructions

1️⃣ Prepare the Meatballs

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine ground beef (or sausage), breadcrumbs, egg, Parmesan cheese, minced garlic, Italian seasoning, salt, and pepper. Mix until well combined.
  3. Roll the mixture into small 1-inch meatballs (about 24 meatballs total) and place on the baking sheet.
  4. Bake for 15–18 minutes, or until browned and cooked through. Set aside to cool slightly.

2️⃣ Prepare the Pasta & Filling

  1. While the meatballs bake, cook the lasagna noodles in salted water until al dente. Drain and lay them flat on a sheet of parchment or foil to prevent sticking.
  2. In a bowl, mix the ricotta cheese with ½ cup of mozzarella and a pinch of salt and pepper. This will be the creamy filling for your roll-ups.

3️⃣ Assemble the Roll-Ups

  1. Spread about 1 cup of marinara sauce evenly on the bottom of a 9×13-inch baking dish.
  2. Take one lasagna noodle and spread a spoonful of the ricotta mixture over it. Place two small meatballs at one end, then roll the noodle up tightly around them.
  3. Place the roll-up seam-side down in the prepared baking dish. Repeat with remaining noodles and meatballs.
  4. Once all roll-ups are arranged, pour the remaining marinara sauce evenly over the top and sprinkle generously with shredded mozzarella cheese.
