Instructions
1️⃣ Prepare the Meatballs
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, combine ground beef (or sausage), breadcrumbs, egg, Parmesan cheese, minced garlic, Italian seasoning, salt, and pepper. Mix until well combined.
- Roll the mixture into small 1-inch meatballs (about 24 meatballs total) and place on the baking sheet.
- Bake for 15–18 minutes, or until browned and cooked through. Set aside to cool slightly.
2️⃣ Prepare the Pasta & Filling
- While the meatballs bake, cook the lasagna noodles in salted water until al dente. Drain and lay them flat on a sheet of parchment or foil to prevent sticking.
- In a bowl, mix the ricotta cheese with ½ cup of mozzarella and a pinch of salt and pepper. This will be the creamy filling for your roll-ups.
3️⃣ Assemble the Roll-Ups
- Spread about 1 cup of marinara sauce evenly on the bottom of a 9×13-inch baking dish.
- Take one lasagna noodle and spread a spoonful of the ricotta mixture over it. Place two small meatballs at one end, then roll the noodle up tightly around them.
- Place the roll-up seam-side down in the prepared baking dish. Repeat with remaining noodles and meatballs.
- Once all roll-ups are arranged, pour the remaining marinara sauce evenly over the top and sprinkle generously with shredded mozzarella cheese.
