Jerk Shrimp Tacos with Pineapple Slaw 🌮🍤🍍

🛒 Ingredients (Serves 4 / Makes 8 Tacos)

For the Shrimp:

  • 500 g (1 lb) shrimp, peeled and deveined 🍤
  • 2 tablespoons olive oil 🫒
  • 2 tablespoons jerk seasoning 🌶️ (store-bought or homemade)
  • ½ teaspoon salt 🧂
  • 1 tablespoon lime juice 🍋

For the Pineapple Slaw:

  • 1 cup fresh pineapple, finely diced 🍍
  • 1 cup red cabbage, shredded 🥬
  • 1 small carrot, grated 🥕
  • ¼ red onion, thinly sliced 🧅
  • 2 tablespoons fresh cilantro, chopped 🌿
  • 1 tablespoon lime juice 🍋
  • 2 tablespoons coconut yogurt or mayonnaise 🥥
  • Salt and pepper, to taste 🧂

To Serve:

  • 8 small corn or flour tortillas 🌮
  • Extra cilantro for garnish 🌿
  • Optional: sliced jalapeño for extra heat 🌶️
