Step 1: Prep the Bread
- Take a quarter loaf of soft white bread and slice off the top crust (set aside).
- Use your fingers to hollow out the center gently, creating a bread bowl without tearing the edges.
Step 2: Cook Fillings
- Fry polony, sausage, or egg to your liking. Prepare fries or use pre-cooked chips to save time.
- Warm up chakalaka or atchar if using.
Step 3: Assemble Your Kota
- Layer the base with fries, followed by your choice of meat (polony, sausage, etc.).
- Add the fried egg, slices of cheese, sauces, and any extras like chakalaka or atchar.
- Drizzle with mayo and tomato sauce or peri-peri for that signature saucy finish.
- Place the bread top back on, press down gently, and serve immediately while warm.
