Lemon Sugar Cookies – Soft, Zesty & Perfectly Sweet

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Cream butter and sugar: In a large bowl, beat the softened butter, granulated sugar, and powdered sugar together until light and fluffy.
  3. Add wet ingredients: Beat in the lemon zest, lemon juice, and vanilla extract until smooth and fully combined.
  4. Mix dry ingredients: In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Combine: Gradually add the dry ingredients to the wet ingredients. Mix just until the dough comes together — avoid over-mixing.
  6. Shape cookies: Roll dough into 1-inch balls and place on prepared baking sheet about 2 inches apart.
  7. Flatten: Gently press each ball with the bottom of a glass or your palm to form a disc.
  8. Bake: Bake for 10–12 minutes or until edges are just lightly golden and centers are set.
  9. Cool: Let cookies cool on the baking sheet for 3–5 minutes before transferring to a wire rack to cool completely.
