For the Tomato Bisque:
- 800 g (28 oz) canned whole or diced tomatoes π
- 1 medium onion, chopped π§
- 3 garlic cloves, minced π§
- 2 tablespoons olive oil π«
- 120 ml (Β½ cup) heavy cream π₯
- 250 ml (1 cup) chicken or vegetable stock πΆ
- Salt and black pepper, to taste π§
- 2 tablespoons chopped fresh basil πΏ
- Optional: pinch of sugar π― to balance acidity
