👩🍳 Instructions
1️⃣ Make the Batter
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, whisk the egg, milk, melted butter, and vanilla (if using).
- Pour the wet ingredients into the dry and stir just until combined. The batter should be slightly thick but pourable. If too thick, add 1–2 tablespoons of milk to loosen.
2️⃣ Cook the Pancakes
- Heat a nonstick skillet or griddle over medium heat and lightly grease with butter or cooking spray.
- Using a small spoon or squeeze bottle, drop small circles of batter (about 1 tablespoon each) onto the pan.
- Cook until bubbles form on the surface and edges look set, about 1–2 minutes. Flip and cook for another 30–60 seconds until golden and fluffy.
- Transfer to a plate and repeat with the remaining batter.
