Mixed Fruit Yogurt Cake with Optional Glaze

🛒 Ingredients

For the Cake:

  • 1½ cups (190 g) all-purpose flour
  • 1 cup (200 g) sugar
  • 1 cup (240 g) plain or vanilla yogurt
  • ½ cup (120 ml) vegetable oil
  • 2 large eggs
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup (150–180 g) mixed fruit, chopped (fresh or frozen berries, mango, pineapple, apple, peaches, etc.)
  • 1 tablespoon flour (for tossing the fruit)

Optional Glaze:

  • 1 cup (120 g) powdered sugar
  • 2–3 tablespoons yogurt or milk
  • ½ teaspoon vanilla extract
