1️⃣ Prep
- Preheat the oven to 175°C (350°F).
- Grease a 20–22 cm (8–9 inch) round cake pan and line the bottom with parchment paper for easy removal.
2️⃣ Prepare the Fruit
- Chop your chosen fruits into small, bite-sized pieces. If using frozen fruit, do not thaw beforehand.
- Toss the chopped fruit with 1 tablespoon of flour to coat. This helps prevent the fruit from sinking to the bottom during baking.
3️⃣ Make the Batter
- In a large mixing bowl, whisk together the yogurt, sugar, eggs, vegetable oil, and vanilla extract until smooth and fully combined.
- In a separate bowl, mix the flour, baking powder, baking soda, and salt.
- Add the dry ingredients to the wet mixture and stir gently until just combined—do not overmix.
- Fold in the floured mixed fruits using a spatula, distributing them evenly throughout the batter.
4️⃣ Bake
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 35–45 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Allow the cake to cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely.
