Mixed Fruit Yogurt Cake with Optional Glaze

👩‍🍳 Instructions

1️⃣ Prep

  1. Preheat the oven to 175°C (350°F).
  2. Grease a 20–22 cm (8–9 inch) round cake pan and line the bottom with parchment paper for easy removal.

2️⃣ Prepare the Fruit

  1. Chop your chosen fruits into small, bite-sized pieces. If using frozen fruit, do not thaw beforehand.
  2. Toss the chopped fruit with 1 tablespoon of flour to coat. This helps prevent the fruit from sinking to the bottom during baking.

3️⃣ Make the Batter

  1. In a large mixing bowl, whisk together the yogurt, sugar, eggs, vegetable oil, and vanilla extract until smooth and fully combined.
  2. In a separate bowl, mix the flour, baking powder, baking soda, and salt.
  3. Add the dry ingredients to the wet mixture and stir gently until just combined—do not overmix.
  4. Fold in the floured mixed fruits using a spatula, distributing them evenly throughout the batter.

4️⃣ Bake

  1. Pour the batter into the prepared cake pan and smooth the top.
  2. Bake for 35–45 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  3. Allow the cake to cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely.
