Ingredients
- 1 cup all-purpose flour (for the cake base)
- 1 cup granulated sugar (to sweeten the cake)

Instructions
- Preheat the oven: Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan or line it with parchment paper for easy removal.
- Mix the dry ingredients: In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, unsweetened cocoa powder, baking powder, and salt. Make sure the dry ingredients are fully combined.
- Add the wet ingredients: Add the milk, vegetable oil, eggs, and vanilla extract to the dry ingredients. Mix until smooth and well combined. Gradually pour in the brewed coffee, and stir the batter until it’s thin and pourable.
- Bake the cake: Pour the batter into the prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
- Layer the ice cream: Once the cake is completely cool, slice it horizontally to create two layers. Let the mocha ice cream soften slightly at room temperature for easier spreading. Spread a thick layer of softened ice cream on top of the bottom layer of the cake.
- Assemble the cake: Place the top layer of cake over the ice cream layer and gently press down. Return the cake to the freezer for about 2 hours to allow the ice cream to firm up.
- Serve and enjoy: Before serving, top the Mocha Ice Cream Cake with whipped cream and a drizzle of chocolate syrup, if desired. Slice and serve immediately for a deliciously cool and creamy dessert!
