No-Bake Banana Peanut Butter Cheesecake with Caramel Drizzle

👨‍🍳 Instructions

1️⃣ Prepare the Base:

  1. In a mixing bowl, combine ground tea biscuits, chopped nuts, and optional brown sugar.
  2. Pour in the melted butter and mix until the texture resembles damp sand.
  3. Press firmly into the bottom and sides of a 9-inch (23 cm) springform pan.
  4. Chill in the refrigerator for at least 30 minutes to set.

2️⃣ Prepare the Cheesecake Filling:

  1. In a large bowl, beat cream cheese, peanut butter, powdered sugar, and vanilla until smooth and creamy.
  2. In a separate bowl, whip the cream until thick and fluffy.
  3. Add mashed banana to the cream cheese mixture and mix gently.
  4. Fold in the whipped cream in two additions until light and well combined.
  5. Pour this filling over the chilled crust and smooth the top. Sprinkle with a few chopped nuts if desired.
  6. Cover and refrigerate for at least 6 hours, preferably overnight, to set fully.

3️⃣ Make the Peanut Butter Cream Layer:

  1. Mix peanut butter, powdered sugar, and sweetened condensed milk until smooth.
  2. Fold in whipped cream until combined and fluffy.
  3. Spread evenly over the set cheesecake layer.
  4. Chill for 1 additional hour to firm up before adding the final topping.
