Ingredients

For the Base

  • 250g Arnott’s Mint Slice biscuits (or similar mint chocolate cookies)
  • 100g unsalted butter, melted

For the Cheesecake Filling

  • ¾ cup (180ml) thickened cream or whipping cream
  • ½ cup (100g) caster sugar or superfine sugar
  • 1 teaspoon peppermint extract (adjust to taste)

  • ¼ cup (60ml) boiling water
  • 2 Peppermint Crisp bars, crushed (or similar mint chocolate bars)
