Ingredients
For the Base
- 250g Arnott’s Mint Slice biscuits (or similar mint chocolate cookies)
- 100g unsalted butter, melted
For the Cheesecake Filling

- ¾ cup (180ml) thickened cream or whipping cream
- ½ cup (100g) caster sugar or superfine sugar
