Instructions
1. Prepare the Base
- Line the base of a 20cm (8-inch) springform pan with baking paper.
- Crush the Mint Slice biscuits in a food processor until fine. Add melted butter and pulse until the mixture resembles wet sand.
- Press the mixture firmly into the base of the pan and smooth evenly with the back of a spoon. Refrigerate while you prepare the filling.
2. Make the Cheesecake Filling
- In a small bowl, dissolve the gelatine in the boiling water. Stir until completely clear and set aside to cool slightly.
- In a large mixing bowl, beat the cream cheese until smooth. Add sugar, peppermint extract, and vanilla, and beat until combined and fluffy.
- Gradually mix in the cooled gelatine solution, beating continuously to avoid lumps.
- In a separate bowl, whip the cream to soft peaks. Fold gently into the cream cheese mixture.
- Stir in the crushed Peppermint Crisp bars evenly through the filling.
3. Assemble & Chill
