No-Bake Mint Slice Peppermint Cheesecake (Choc-Mint Holiday Dream)

Instructions

1. Prepare the Base

  1. Line the base of a 20cm (8-inch) springform pan with baking paper.
  2. Crush the Mint Slice biscuits in a food processor until fine. Add melted butter and pulse until the mixture resembles wet sand.
  3. Press the mixture firmly into the base of the pan and smooth evenly with the back of a spoon. Refrigerate while you prepare the filling.

2. Make the Cheesecake Filling

  1. In a small bowl, dissolve the gelatine in the boiling water. Stir until completely clear and set aside to cool slightly.
  2. In a large mixing bowl, beat the cream cheese until smooth. Add sugar, peppermint extract, and vanilla, and beat until combined and fluffy.
  3. Gradually mix in the cooled gelatine solution, beating continuously to avoid lumps.
  4. In a separate bowl, whip the cream to soft peaks. Fold gently into the cream cheese mixture.
  5. Stir in the crushed Peppermint Crisp bars evenly through the filling.

    3. Assemble & Chill
