No-Bake Peanut Butter Cheesecake Balls

Instructions

  1. Mix the Base: In a large bowl, combine the softened cream cheese and peanut butter. Use an electric mixer to blend them together until the mixture is smooth and creamy. Gradually add in the powdered sugar and vanilla extract, continuing to mix until everything is well combined. The powdered sugar will sweeten the mixture and help it form into a dough-like texture. Once the mixture is smooth, fold in the graham cracker crumbs. This will make the dough thick and sticky, perfect for forming into balls.
  2. Form the Balls: Scoop out tablespoon-sized portions of the peanut butter mixture and roll them into small balls using your hands. If the mixture is too sticky, lightly dust your hands with powdered sugar to make the process easier. Arrange the rolled balls on a baking sheet lined with parchment paper. This will help prevent sticking and make cleanup easier later.
  3. Chill the Balls: Place the baking sheet in the refrigerator for about 30 minutes to allow the balls to firm up. Chilling them will make them easier to handle and ensure that the chocolate coating sets properly when you dip them.
  4. Melt the Chocolate: While the cheesecake balls are chilling, melt the semi-sweet chocolate chips and coconut oil (or butter) in a microwave-safe bowl. Heat in intervals of 20-30 seconds, stirring in between until the mixture is smooth and fully melted. Be careful not to overheat the chocolate; stir well to achieve a silky, glossy consistency.
  5. Dip the Balls: Once the cheesecake balls have chilled and firmed up, remove them from the fridge. Using a fork or skewer, dip each ball into the melted chocolate, ensuring it’s coated evenly. Gently tap the fork on the side of the bowl to let any excess chocolate drip off. Then, place the chocolate-coated balls back onto the parchment-lined baking sheet.
  6. Set the Chocolate: After all the balls are coated, return them to the refrigerator for an additional 30 minutes to allow the chocolate to set. The chocolate should harden to a smooth, glossy finish, giving your cheesecake balls that irresistible crunch on the outside while keeping the creamy filling inside.
  7. Enjoy: Once the chocolate has firmed up, your No-Bake Peanut Butter Cheesecake Balls are ready to enjoy! These treats are perfect for sharing with friends and family, or for enjoying all by yourself. They’re rich, creamy, and completely irresistible!
