🥣 Step 1: Make the Pistachio Paste
- Grind the pistachios in a food processor until fine.
- Reserve about ½ cup of the ground pistachios for topping.
- Add ⅓ cup cream to the remaining pistachios and continue processing until it forms a smooth, thick paste.
- Transfer the paste to a bowl and set aside.

- In a mixing bowl, beat the softened cream cheese or mascarpone until smooth and creamy.
- Add the pistachio paste and vanilla, then beat for another minute until well combined.
- Mix in the powdered sugar and 1 cup room-temperature cream until smooth.
- In a separate bowl, whip the 2 cups of cold heavy cream until stiff peaks form.
- Gently fold about 1½ cups of whipped cream into the pistachio base with a spatula until fully incorporated.
- Fold in the remaining whipped cream just until the mixture is fluffy and light.
