No-Bake Pistachio Tiramisu – Creamy, Elegant & Irresistible

🥣 Step 1: Make the Pistachio Paste

  1. Grind the pistachios in a food processor until fine.
  2. Reserve about ½ cup of the ground pistachios for topping.
  3. Add ⅓ cup cream to the remaining pistachios and continue processing until it forms a smooth, thick paste.
  4. Transfer the paste to a bowl and set aside.

🍰 Step 2: Prepare the Cream

  1. In a mixing bowl, beat the softened cream cheese or mascarpone until smooth and creamy.
  2. Add the pistachio paste and vanilla, then beat for another minute until well combined.
  3. Mix in the powdered sugar and 1 cup room-temperature cream until smooth.
  4. In a separate bowl, whip the 2 cups of cold heavy cream until stiff peaks form.
  5. Gently fold about 1½ cups of whipped cream into the pistachio base with a spatula until fully incorporated.
  6. Fold in the remaining whipped cream just until the mixture is fluffy and light.
