Ingredients

  • 4 salmon fillets (6 oz each)
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 1/2 cups orzo pasta
  • 2 1/2 cups chicken or vegetable broth
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 2 cups fresh baby spinach
  • 1/4 cup Parmesan cheese, grated (optional)
  • Fresh parsley, chopped, for garnish
  • Lemon slices, for garnish

Directions

1️⃣ Season and Sear the Salmon

  1. Season the salmon fillets generously with salt, black pepper, garlic powder, and paprika. These seasonings will enhance the natural flavors of the fish while adding a savory, aromatic crust when seared.
  2. Heat olive oil in a large skillet over medium-high heat. Once the oil is shimmering, carefully add the salmon fillets to the skillet, skin-side down (if the skin is still on). Sear the salmon for 4-5 minutes per side until golden brown and cooked through. The salmon should have a crispy exterior while remaining tender and juicy inside.
  3. Once the salmon is cooked, remove it from the skillet and set it aside on a plate. Cover with foil to keep warm.

2️⃣ Prepare the Lemon Orzo

  1. In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute, stirring frequently, until the garlic becomes fragrant. Be careful not to burn the garlic, as it can turn bitter.
  2. Add the orzo pasta to the skillet and stir to coat it in the butter and garlic. The orzo will soak up some of the butter and garlic flavors, giving it a delicious, aromatic base.
  3. Pour in the chicken or vegetable broth, followed by the lemon juice and lemon zest. Bring the mixture to a boil, then reduce the heat to low. Cover the skillet and let it simmer for 10 minutes, stirring occasionally. The orzo will absorb the liquid and become tender and creamy.
