Orange Creamsicle Cake – Light, Fluffy & Bursting with Citrus Flavor

👩‍🍳 Instructions

1️⃣ Make the Cake:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9–10 inch (22–24 cm) round cake pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a separate large bowl, beat the sugar, oil, and eggs for 1–2 minutes until pale and slightly thickened.
  4. Add the orange juice, milk, orange zest, vanilla, and optional orange flavoring. Stir gently to combine.
  5. Fold in the dry ingredients with a spatula until just combined — do not overmix.
  6. Pour batter into the prepared pan and bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let the cake cool in the pan for 10 minutes, then transfer to a rack to cool completely.

2️⃣ Prepare the Orange Syrup:

  1. In a small saucepan, combine orange juice, sugar, and vanilla.
  2. Heat gently over low heat for 2–3 minutes until sugar is dissolved. Let cool completely.

3️⃣ Make the Creamsicle Frosting:

  1. Using a hand or stand mixer, whip the cold heavy cream until it starts to thicken.
  2. Add the powdered sugar, vanilla, and orange extract or juice.
  3. Continue whipping until medium peaks form (light and fluffy, but still spreadable).
  4. Gently fold in the orange zest with a spatula.
