Pancake Sausage Casserole

Instructions

1️⃣ Cook the Sausage

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
  2. In a large skillet over medium heat, cook the breakfast sausage, breaking it into small crumbles. Cook until browned and no longer pink. Drain excess grease and set aside to cool slightly.

2️⃣ Make the Pancake Batter

  1. In a medium mixing bowl, whisk together the pancake mix, milk, and egg until just combined. The batter should be smooth but not overmixed — small lumps are fine.
  2. Pour half of the pancake batter into the prepared baking dish, spreading evenly to form a base layer.

3️⃣ Assemble the Casserole

  1. Sprinkle the cooked sausage evenly over the pancake batter layer.
  2. Drizzle the maple syrup over the sausage for that perfect sweet-and-savory balance.
  3. Pour the remaining pancake batter on top, spreading gently with a spatula to cover the sausage mixture.
