3/4 cup chopped pecans
1/3 cup brown sugar
3 tbsp heavy cream
1 tbsp unsalted butter
1/2 tsp vanilla extract
Steps:
Prepare the Cookie Dough:
In a bowl, cream together butter and brown sugar until fluffy.
Mix in egg yolk and vanilla extract.
Gradually add flour and salt, mixing until combined.
Roll dough into 1-inch balls and place them on a parchment-lined baking sheet.
Use your thumb or a spoon to make an indentation in each cookie.
Make the Pecan Filling:
In a saucepan, melt butter over medium heat.
Stir in brown sugar, heavy cream, and pecans. Cook for 1-2 minutes until thickened.
Remove from heat and stir in vanilla extract.
