1️⃣ Prep the Roast
- Take the prime rib roast out of the refrigerator and let it sit at room temperature for 1–2 hours before cooking. This helps the roast cook more evenly.
2️⃣ Season Generously
- In a small bowl, mix together olive oil, kosher salt, black pepper, garlic powder, rosemary, thyme, and minced garlic.
- Rub this seasoning mixture generously all over the surface of the roast, making sure to coat it evenly.
3️⃣ Roast the Prime Rib 🍖
- Preheat your oven to 500°F (260°C).
- Place the roast fat side up on a rack in a roasting pan. This will help the fat render and form a delicious crust.
- Roast at 500°F for 15 minutes to sear the exterior of the roast.
- Reduce the oven temperature to 325°F (160°C) and continue roasting for about 1½–2 hours, or until the internal temperature reaches your desired level of doneness:
- 120°F (49°C) for rare
- 130°F (54°C) for medium-rare
- 140°F (60°C) for medium
4️⃣ Rest the Roast 🛏️
- Remove the roast from the oven and tent it loosely with foil.
- Let it rest for 20–30 minutes before slicing. This allows the juices to redistribute, ensuring a moist and tender roast.
