1️⃣ Cook the Pasta
- Bring a pot of salted water to a boil and cook rotini pasta according to package directions until al dente.
- Drain and rinse under cold water to cool. Set aside.
2️⃣ Make the Avocado Pesto Dressing
- In a food processor or blender, combine the ripe avocado, basil pesto, lemon juice, and olive oil.
- Blend until smooth and creamy. Season with salt and pepper to taste.
3️⃣ Assemble the Salad
- In a large bowl, combine the cooled pasta, cherry tomatoes, and mozzarella balls.
- Pour the avocado pesto dressing over the salad and toss gently until everything is evenly coated.
