- Preheat the oven. Set your oven to 350°F (175°C). Grease a 9×13-inch baking dish to ensure the cake doesn’t stick while baking.
- Mix the pumpkin base. In a large bowl, combine the pumpkin puree, evaporated milk, eggs, granulated sugar, brown sugar, cinnamon, nutmeg, ginger, and cloves. Stir everything together until smooth. The mixture should be creamy and well combined.
- Prepare the cake layers. Pour the pumpkin mixture into the prepared baking dish, spreading it out evenly. Then, sprinkle the dry yellow cake mix evenly over the pumpkin mixture. Top with the rolled oats and chopped pecans (if using), making sure the oats are evenly distributed across the surface.
- Add the butter. Drizzle the melted butter evenly over the top of the cake mixture, ensuring that all of the cake mix is moistened. This helps create a golden, crispy top as the cake bakes.
- Bake the cake. Place the dish in the oven and bake for 50-60 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean. The baking time may vary slightly depending on your oven, so keep an eye on it towards the end.
- Cool and serve. Let the cake cool slightly before serving. It can be served warm with a dollop of whipped cream or a scoop of vanilla ice cream for an extra indulgence!
