  1. Heat the cream (do not boil).Warm until steaming; overheating can cause separation.
  2. Pour over the chopped chocolate.Ensure the chocolate is finely chopped so it melts smoothly.
  3. Wait 2 minutes, then stir until melted.Start stirring from the center in small circles for the best emulsification.
  4. Add the butter and stir until smooth.The butter lends shine and a softer finish.
  5. Chill for 10–15 minutes before using.Allowing it to cool slightly thickens it to the perfect spreading consistency.
