Ingredients
- 2 cups fresh strawberries, hulled and halved
- 1–2 tablespoons honey or powdered sugar (for sweetening the strawberries)
- 2 tablespoons honey or maple syrup (for drizzling and extra sweetness)
- 1/2 cup ricotta cheese (whole milk or part-skim for creaminess)
- 1 tablespoon heavy cream (for whipping the ricotta to a smooth consistency)
- 2 slices thick, rustic bread (such as sourdough or your favorite bread for toasting)
- Fresh mint leaves (optional, for garnish)
Instructions
- Preheat the oven: Start by preheating your oven to 375°F (190°C). This will allow you to roast the strawberries at the right temperature, ensuring they caramelize and become sweet and tender while retaining their flavor.
- Prepare the strawberries: Wash and hull the strawberries, removing the stems. Then, cut them in half to expose the sweet interior. Place the halved strawberries in a bowl and drizzle with 1–2 tablespoons of honey or powdered sugar. The honey will enhance their sweetness and create a natural syrup as they roast. Stir the strawberries gently to coat them evenly in the sweetener.
