Roasted Strawberry Whipped Ricotta Toast Recipe

  • Roast the strawberries: Spread the sweetened strawberries in a single layer on a baking sheet lined with parchment paper. This will help them roast evenly and prevent them from sticking. Roast the strawberries in the preheated oven for about 20-25 minutes, or until they’re soft, juicy, and slightly caramelized. Stir the strawberries halfway through the roasting time to ensure even cooking and prevent them from burning. The strawberries should become tender and release their juices, creating a syrupy mixture.

  • Toast the bread: While the ricotta is being whipped and the strawberries are roasting, toast the slices of rustic bread. You can use a toaster, a grill pan, or a broiler for this step. Toast the bread until it is golden brown and crispy, which will add a wonderful crunch that contrasts beautifully with the creamy ricotta and tender strawberries.
  • Assemble the toast: Once the strawberries have finished roasting, remove them from the oven and allow them to cool slightly. Spread a generous layer of whipped ricotta onto each slice of toasted bread. Then, top the ricotta with the roasted strawberries, allowing the syrup from the strawberries to drizzle down the sides of the toast. For an extra touch of sweetness and richness, drizzle with an additional 2 tablespoons of honey or maple syrup.
  • Garnish and serve: For a fresh, bright touch, garnish with a few fresh mint leaves, if desired. The mint adds a refreshing contrast to the sweetness of the strawberries and the richness of the ricotta. Serve immediately and enjoy this delicious, wholesome, and indulgent toast.
