Rotel Cream Cheese Sausage Balls

Ingredients

  • 1 pound ground pork sausage (mild or spicy, depending on preference)
  • 8 ounces cream cheese (softened, at room temperature)
  • 1 (10-ounce) can Rotel diced tomatoes with green chilies (drained well)
  • 2 cups shredded cheddar cheese (sharp cheddar recommended for extra flavor)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or a silicone baking mat for easy cleanup.
  2. In a large mixing bowl, combine the ground pork sausage, softened cream cheese, drained Rotel tomatoes with green chilies, and shredded cheddar cheese. Use your hands or a spatula to mix everything together until fully incorporated. The cream cheese helps bind the mixture, giving the sausage balls a creamy texture and rich flavor.
  3. Once the ingredients are thoroughly mixed, form the mixture into small, bite-sized balls, about 1 to 1 1/2 inches in diameter. Place them on the prepared baking sheet, spacing them evenly apart to allow for even baking.
  4. Bake the sausage balls in the preheated oven for 20-25 minutes, or until they are golden brown and cooked through. You can check if they’re done by cutting one open to ensure the center is no longer pink.
