1οΈβ£ Cook the Salmon
- If using fresh salmon, bake or steam until just cooked through, then flake with a fork.
- If using canned salmon, drain well and remove any bones or skin if desired.
2οΈβ£ Prepare the Mixture
- In a large bowl, combine flaked salmon, spinach, feta cheese, onion, garlic, dill, lemon zest, lemon juice, egg, and breadcrumbs.
- Mix gently until everything is evenly combined. The mixture should hold together when pressed; add more breadcrumbs if too wet.
3οΈβ£ Shape the Patties
- Form the mixture into 6β8 patties, about 2 cm (1 inch) thick.
- Place the patties on a tray and refrigerate for 15β20 minutes to help them firm up.
4οΈβ£ Cook the Salmon Cakes
- Heat olive oil in a non-stick skillet over medium heat.
- Fry the salmon cakes for 3β4 minutes per side, until golden brown and crispy. Make sure to flip carefully to avoid breaking.
5οΈβ£ Serve & Enjoy
- Serve warm with a dollop of Greek yogurt, a drizzle of lemon and dill sauce, or as a filling in pita bread with fresh veggies.
