Sausage, Egg, and Cheese Breakfast Roll-Ups

Instructions

    1. Preheat the oven: Start by preheating your oven to 375°F (190°C). This temperature will allow the crescent roll dough to bake to a golden, crispy perfection while the filling stays warm and cheesy.
    2. Prepare the sausage: If you’re using breakfast sausage links, cook them according to the package instructions, or pan-fry them in a skillet over medium heat for 5-7 minutes until they’re browned and cooked through. Once the sausage is cooked, slice each sausage link in half lengthwise. If you’re using sausage patties, simply cut each patty in half to make them easier to fit inside the crescent roll dough. Set the sausage halves aside while you prepare the eggs.
    3. Scramble the eggs: In a medium-sized bowl, crack the four large eggs and beat them with a fork or whisk until well combined. Add a pinch of salt and pepper to taste. In a skillet, melt the butter over medium-low heat. Pour the beaten eggs into the skillet and cook them, stirring gently, until the eggs are scrambled and fully set, about 3-4 minutes. The eggs should be soft and fluffy—be careful not to overcook them. Once done, remove them from the heat and set them aside.
    4. Unroll the crescent dough: Open the package of refrigerated crescent roll dough and unroll it onto a baking sheet lined with parchment paper or a silicone baking mat. Separate the dough into the 8 individual triangles. If you like, you can pinch the perforations together to form a single rectangle for easier assembly.
    5. Assemble the roll-ups: Place a sausage half in the center of each crescent roll triangle. Then, add a spoonful of scrambled eggs on top of the sausage, followed by a generous sprinkle of shredded cheddar cheese. If you prefer a different cheese, feel free to substitute with mozzarella, Monterey Jack, or even pepper jack for an extra kick. Carefully roll up each crescent roll, starting at the wide end and rolling towards the pointed tip, sealing the edges as you go to enclose the filling.
    6. Bake the roll-ups: Place the assembled roll-ups on the prepared baking sheet, ensuring they are evenly spaced apart. Bake in the preheated oven for 12-15 minutes, or until the crescent roll dough is golden brown and fully cooked. The cheese inside should be melted, and the sausage and eggs will be warm and flavorful. Keep an eye on the roll-ups towards the end of the baking time to ensure they don’t over-brown.
