Seared Scallops with Cilantro Lime Sauce

Instructions

1️⃣ Prepare the Scallops

  1. Pat the scallops completely dry with paper towels — this ensures a perfect golden sear.
  2. In a bowl, combine olive oil, paprika, garlic powder, salt, black pepper, cayenne (if using), and lime juice.
  3. Add the scallops and toss gently to coat. Let them marinate for at least 30 minutes, or up to 24 hours in the refrigerator.

2️⃣ Sear the Scallops

  1. Heat a large skillet (preferably cast-iron) over medium-high heat until hot.
  2. Lightly coat the pan with olive oil.
  3. Place the scallops in the pan, spacing them apart. Sear for 2–3 minutes per side, until golden brown and opaque in the center.
  4. Do not move them while searing — this helps form a caramelized crust.
  5. Remove from the skillet and set aside on a warm plate.
