Instructions
1️⃣ Prepare the Scallops
- Pat the scallops completely dry with paper towels — this ensures a perfect golden sear.
- In a bowl, combine olive oil, paprika, garlic powder, salt, black pepper, cayenne (if using), and lime juice.
- Add the scallops and toss gently to coat. Let them marinate for at least 30 minutes, or up to 24 hours in the refrigerator.
2️⃣ Sear the Scallops
- Heat a large skillet (preferably cast-iron) over medium-high heat until hot.
- Lightly coat the pan with olive oil.
- Place the scallops in the pan, spacing them apart. Sear for 2–3 minutes per side, until golden brown and opaque in the center.
- Do not move them while searing — this helps form a caramelized crust.
- Remove from the skillet and set aside on a warm plate.
